Asian Sesame Salad with Chicken

The perfect salad for using leftover cooked chicken. A crunchy salad tossed with a sesame vinaigrette makes a refreshing main-dish salad. For added crunch, add crispy Asian noodles such as rice or chow mein.


4 cups shredded Napa, or iceberg lettuce
2 cups shredded cooked chicken
1 large red bell pepper, cut into strips
1 cup shredded carrots
1 cup thinly sliced snow peas
1/2 cup sliced green onions
2 garlic cloves, minced
1 (28 ounce) can Redpack® Petite Diced Tomatoes, drained
1 cup Asian style vinaigrette
1/4 cup chopped peanuts
2 tablespoons sesame seeds


  • Combine all ingredients except dressing, peanuts and sesame seeds in a large bowl. Just before serving toss salad with dressing and sprinkle with peanuts and sesame seeds.
