Beef Enchiladas

These enchiladas are absolutely amazing! Truly a recipe your family will love.


1 pound lean ground beef, or shredded beef
1 large yellow onion, chopped
2 garlic cloves, minced
1 tablespoon ground cumin
1 teaspoon chili powder
1 (8 ounce) can Redpack® Tomato Sauce
1 (14.5 ounce) can Redpack® Petite Diced Tomatoes
10 (6 inch) flour tortillas
1 (4 ounce) can green chilies
2 cups shredded cheddar cheese
1/4 cup reduced fat sour cream


  • Preheat oven to 350o F. In a large skillet brown ground beef and onion, over medium heat, until no longer pink. Drain off excess fat and stir in garlic, cumin, chili powder, tomato sauce and ¾ cup petite diced tomatoes and green chilies.
  • Grease a 13 x 9 inch baking dish. Spread about ¼ cup meat mixture and 2 tablespoons of cheese down the center of each tortilla. Roll up and place seam side down in the baking dish. Pour remaining petite diced tomatoes over tortillas and top with remaining cheese.
  • Bake for 20 to 25 minutes or until cheese is melted. Garnish with sour cream.
