Bruschetta Grilled Chicken

COOK: 15 minutes
Chicken that has been marinated, then grilled is finished with a fresh bruschetta topping of tomatoes, garlic, red onion, balsamic vinegar, olive oil and fresh basil.


1 tablespoon extra virgin olive oil
1/4 cup balsamic vinegar
2 garlic cloves, minced
Salt and black pepper to taste
4 boneless chicken breasts, pounded to 1/2 thick or thin cut chicken breasts
Bruschetta Topping
1 (28 ounce) can Redpack® Diced Tomatoes, drained
2 garlic cloves, minced
1/4 cup red onion, finely chopped
2 tablespoons balsamic vinegar
1 tablespoon extra virgin olive oil
Sea salt and ground black pepper to taste
2 tablespoons fresh basil leaves, chopped


  • Prepare marinade by combining oil, balsamic vinegar, garlic, salt and black pepper in a plastic bag or in a bowl.  Add pounded chicken to the marinade, remove air if using a bag and seal closed or cover bowl tightly with plastic wrap.  Place in refrigerator for 30 minutes or overnight.
  • Prepare the bruschetta topping by combining the diced tomatoes, garlic, onion, vinegar, oil, salt, black pepper and basil in a small bowl and stir to combine.  The topping is best if you can allow it to set for 30 minutes or longer to allow flavors to combine.
  • Remove chicken from marinade and place on grill or on a grill pan if doing stovetop.  Cook for about 6 minutes each side or until cooked through, turning once and brushing with marinade.
  • Remove chicken from grill and let set for 5 minutes.  Top each breast with about 1/4 cup of bruschetta and serve.
