Creole Chicken Salad

This recipe combines many of the traditional ingredients of jambalaya, a classic Cajun dish. This salad can be made to serve immediately or chilled for later, whichever you desire.


1 cups white rice, cooked and cooled
2 boneless skinless chicken breasts, cooked and diced
1 cup diced celery
1/2 cup chopped green onions
1 (28 ounce) can Redpack® Petite Diced Tomatoes, drained
1 large green bell pepper, diced
Salt and black pepper to taste
3 tablespoons cider vinegar
2 teaspoons Cajun seasoning
1/2 cup vegetable oil


  • In a large bowl combine rice, chicken, celery, onions, petite diced tomatoes and green bell pepper; stir gently to combine.
  • In a small bowl combine vinegar and Cajun seasoning; mix with a wire whisk. Gradually beat in oil until well blended. Pour dressing over salad; tossing to coat. Serve immediately, or cover and refrigerate until serving time.
  • Option: Serve on a bed of lettuce
