Easy Chicken, Rice & Tomatoes

This casserole has southwest flavors with black beans, yellow rice, chicken, our Petite Diced Tomatoes, green chilies and Monterey Jack cheese. So easy and tasty, your family is sure to put it on repeat!

Ingredients

1 (10 ounce) package yellow rice mix
1 tablespoon extra virgin olive oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped carrots
2 cups cubed cooked chicken
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can Redpack® Petite Diced Tomatoes
green chilies
2 cups shredded Monterey Jack cheese

Directions

  • Preheat oven to 350o F. Prepare rice according to package directions.
  • In a medium skillet, heat oil over medium heat. Add onion, green pepper and carrots; sauté for about 10 minutes or until soft. Add cooked rice, chicken, beans, petite diced tomatoes, green chilies and 1½ cups of cheese to the skillet; stir to combine.
  • Spoon the mixture, from skillet, into a 9 X 13 inch baking dish and sprinkle with remaining cheese.
  • Cover and bake for 30 minutes. Uncover and bake an additional 10 minutes to melt cheese.
