Directions
- In a large skillet cook potatoes, onions and zucchini in oil for 5 minutes or until brown and almost tender. Add green bell pepper and petite diced tomatoes.
- Cook for 5 minutes to blend flavors. Sprinkle with cheese; cover and cook for 3 to 5 minutes or until cheese is melted.
